Vanilla Fruit Cake - Recipe

Ingredients

Cake:

2 cups plain / all purpose flour (cake flour OK too
2 1/2 teaspoons baking powder (check it's still active)
1/4 tsp cooking salt
4 eggs (50 – 55g / 2 oz each), at room temperature
1/2 cups granulated/regular sugar
115g / 1/2 cup unsalted/ salted butter
1 cup of milk (2%, 3%)
3 tsp vanilla extract , the best you can afford!
3 tsp vegetable or canola oil

1 tsp of gelatin
1 tbsp of cold water
1 cup of heavy whipping cream
2 tbsp powdered sugar
1/2 tsp vanilla extract

Instructions

Cake:

1- Preheat the oven to 180°C/350°F.
2- Grease your cake pan with oil or butter.
3- In a large bowl, whisk flour, baking powder and salt. Put aside.
4- In a mixer, beat eggs for 30 seconds.
5- Slowly add the sugar in. Pour the sugar in overall 45 seconds.
6- Beat for 7 min or until it trippled in volume and white.
7- Heat up the milk.
8- Slowly add in the flour.
9- Pour hot milk, vanilla and oil into the now empty flour bowl.
10- Slowly add in milk.
11- Bake in the oven for aprox. 30 min.

1- In a small bowl, sprinkle the gelatin over cold water.
2- Let it sit for 5 min.
3- Microwave it for 10 secs, until it becomes liquid.
4- In a bowl, pour 1 cup cold heavy cream.
5- Add the powdered sugar and vanilla extract.
6- Begin whipping the cream on medium speed.
7- Slowly drizzle the liquid gelatin when the cream reaches soft peaks.
8- Whip until it looks smooth, hold its shape, and feel fluffly.

Decorate it and Tada !!!
